<Arts Talk>Summer Treats: Ice Cream + Wine (2)
Let’s continue to introduce the pairing of ice cream and wine in summer in this issue.
Peach Flavour Ice Cream + White Grape Blend
White Blend is wine by blending a variety of white grape varieties. Take the Bordeaux white grape blending as an example. Due to the changeable weather in Bordeaux, if you rely too much on a single grape variety to make wine, the risk is very high. Therefore, most of the Bordeaux wines are made from a blend of multiple grape varieties. There are seven grape varieties allowed to be used in Bordeaux blended white wines, the most common of which are Semillon, Sauvignon Blanc and Muscadelle.
Raspberry Ice cream + Merlot
Merlot wines are darker in colour, rich in fruity aromas of red and blackberries (red cherries, strawberries, black cherries, and black currants). It will also create the alluring breadth of dried plums, bushes, and cedar during the ageing process. The tannins of a good Merlot are rich and silky, full of silk texture. Therefore, accompanied by Cabernet Sauvignon to become a classic match of strength and softness in the blend, which is especially common in Bordeaux.
Sorbet Ice Cream + Sauvignon Blanc
The most distinctive feature of Sauvignon Blanc is full of acidity, followed by its easy-to-recognize rich aroma. In cool climate areas, Sauvignon Blanc performs the best. It shows a strong, typical green herb aroma, often accompanied by passionflower or elderflower. The best Sauvignon Blanc comes from relatively poor, well-draining soils, such as the chalky and flint soils of the Loire River, and the sandy soil of Bordeaux, which can naturally control the growth of the grape’s branches and leaves. The most classic Sauvignon Blanc emphasizes the natural flavour of grapes and avoids artificially adding flavour processes, such as oak barrel fermentation and maturation, oxidation, and conversion of malic acid into lactic acid. In most cases, fermentation is carried out in low-temperature stainless steel barrels and bottling as early as possible.
